What makes a Sudoku easy?

Easy puzzles start with more given numbers, so there's almost always a cell where only one digit can legally fit. You solve them by scanning — reading a row, column, or box and asking "which number is missing, and where can it only go?" No note-keeping required, no dead ends, no guessing.
